Pleskana (Ukrainian: плескана) is a Ukrainian dish of buckwheat lemishka rolled with pounded hemp seed, shaped into small loaves and browned in the oven.[1]: 159[2]: 61 Lemishka is a dish made of flour.[3] In Borys Hrinchenko's dictionary of Ukrainian, pleskana is pieces of buckwheat lemishka covered with pounded hemp seed and fried.[4]
Making pleskana
Mykola Markevych's collection of Ukrainian customs, beliefs and cookery (Kiev, 1860) gives the recipe. Buckwheat lemishka is made first. Hemp seed is pounded and sifted through a sieve. The lemishka is rolled in the seed, shaped into small loaves (palianychky) and pressed firmly. The loaves are packed into a makitra and set in the oven to brown.[1]: 159 Zinoviia Klynovetska's cookbook Stravy i napytky na Ukraini (Kyiv and Lviv, 1913) gives the same steps in Ukrainian.[2]: 61
